    Add 2 cups sharp cheddar, 1 cup Gruyère, and 1 cup Monterey Jack cheese to the béchamel. Stir until completely melted and smooth. Season with 1 tsp sea salt and ½ tsp black pepper. Fold in the drained macaroni until fully coated. Set aside.

    In a large skillet, brown 1½ lbs lean ground beef over medium-high heat (7-10 min). Drain excess fat. Reduce heat to medium. Add 1 medium diced onion; cook 5-7 min until soft. Stir in 3-4 minced garlic, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp smoked paprika, ½ tsp dried oregano, ½ tsp black pepper, and 1 tsp salt. Cook 1 min until fragrant.     Evenly spread half of the cooked ground beef mixture over each pastry rectangle, leaving a 1-inch border. Gently spoon half of the mac and cheese mixture over the beef. Sprinkle half of the chopped crispy beef bacon bits over the mac and cheese.

    Whisk 1 large egg with 1 tbsp water for egg wash. Starting from a long side, firmly roll up each pastry sheet into a tight log. Brush the edge with egg wash and press firmly to seal the seam. Transfer seam-side down to a parchment-lined baking sheet.

    Preheat oven to 400°F (200°C). Brush the tops and sides of each roll log with egg wash and sprinkle with sesame seeds (optional). Bake for 30-35 minutes, or until the puff pastry is deeply golden brown, puffed, and flaky. Internal filling should be hot and bubbly.

    Carefully remove from oven and transfer to a wire rack. Allow to rest for 10-15 minutes before slicing into 1½-2 inch thick individual servings. Serve warm.
