Instructions

  1. Combine raspberries and 2 tablespoons milk in a small saucepan.
  2. Simmer over medium-low heat, stirring occasionally, until raspberries soften (5-7 minutes).
  3. (Optional) Strain the mixture through a fine-mesh sieve to remove seeds. Discard seeds.
  4. Cool slightly.
  5. In a blender, combine softened ice cream, remaining milk, and raspberry puree (or softened raspberries). Add raspberry syrup if using.
  6. Blend on medium speed until smooth and creamy (30-60 seconds).
  7. Taste and adjust sweetness/raspberry flavor as needed.
