  • 1 pound bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups BBQ sauce
  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes, stirring occasionally.
  2. Use a slotted spoon to remove the bacon and place it on a paper towel-lined plate to drain excess grease, leaving about 2 tablespoons of bacon grease in the skillet.
  3. Add the diced onion to the skillet and cook for about 3-4 minutes until translucent.
  4. Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  5. Add the ground beef, breaking it up with a spatula, and cook until browned, about 6-8 minutes. Season with salt, pepper, and Italian seasoning.
  6. Drain any excess fat, stir in the BBQ sauce and cooked bacon, and mix well. Remove from heat and set aside.
  7. Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente, about 8-10 minutes.
  8. Drain the noodles and rinse under cold water to stop the cooking process. Lay them flat on a clean kitchen towel or parchment paper.
  9. In a medium bowl, combine the ricotta cheese, 1 cup of shredded mozzarella cheese, and ½ cup of shredded cheddar cheese. Mix well.
  10. Season the cheese mixture with a pinch of salt and pepper, and set aside.
  11. Preheat your oven to 375°F (190°C).
  12. Spread a thin layer of the BBQ meat mixture on the bottom of a 9×13 inch baking dish.
  13. Place 4 lasagna noodles over the meat mixture, slightly overlapping if necessary.
  14. Spread half of the ricotta cheese mixture over the noodles, followed by a layer of the BBQ meat mixture.
  15. Sprinkle a layer of shredded mozzarella and cheddar cheese over the meat mixture.
  16. Repeat the layering process: add another layer of 4 lasagna noodles, the remaining ricotta cheese mixture, the remaining BBQ meat mixture, and another layer of shredded cheese.
  17. Finish with a final layer of 4 lasagna noodles on top, spread any remaining BBQ sauce over the noodles, and top with the remaining mozzarella and cheddar cheese.
  18. Cover the baking dish with aluminum foil, ensuring it doesn’t touch the cheese.
  19. Bake in the preheated oven for 25 minutes.
  20. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  21. Let the lasagna sit for about 10-15 minutes before slicing.
  22. Slice the lasagna into squares and serve warm, garnished with fresh chopped parsley.
