Step 1
Gently combine ground beef, Worcestershire, garlic powder, onion powder, smoked paprika, pepper, salt (and parsley if using) in a bowl. Do not overmix. Form into 8 patties, 3/4-inch thick, slightly wider than buns. Press a shallow indentation in the center of each. Refrigerate for at least 30 minutes. -

Lay beef bacon slices in a cold skillet or on a baking sheet. Cook over medium-low heat on stovetop (10-15 min, turning) or bake at 400°F (200°C) for 15-20 min until crispy and golden-brown. Drain on paper towels. -

Pat pineapple rings dry. Lightly brush both sides with olive/coconut oil; sprinkle brown sugar (optional). Preheat grill or grill pan to medium-high. Grill pineapple 2-3 minutes per side until grill marks appear, softened, and caramelized. Set aside. -

In a small bowl, whisk together mayonnaise, ketchup, mustard, relish, apple cider vinegar, smoked paprika, garlic powder, and cayenne (optional). Season with salt and pepper to taste. Refrigerate until assembly. -

Preheat grill or cast-iron skillet to medium-high. Place chilled patties on hot surface. Cook 4-5 min/side for medium-rare, 5-6 min/side for medium, or 6-7 min/side for well-done. Do not press patties. For cheese, place slices on patties during the final minute of cooking, then close lid to melt. Transfer cooked patties to a plate and rest for at least 5 minutes. -

Slice brioche buns in half. Lightly butter cut sides and toast on the grill, in a dry skillet, or under the broiler for 1-2 minutes until golden. Ensure lettuce is washed and dried. Thinly slice red onion and ripe tomatoes (if using). -
Step 7
Spread burger sauce generously on the bottom bun. Layer with lettuce, a cooked beef patty (with melted cheese if used), 2-3 slices of crispy beef bacon, and 1-2 grilled pineapple rings. Add optional sliced red onion and tomato. Spread more sauce on the top bun and place to complete your burger. Serve immediately for peak enjoyment.
