  • 1/4 cup maple syrup or agave syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup dairy-free chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 cup crushed nuts (optional, for added crunch)
  • Mini cupcake liners (for serving)

Instructions

  1. In a medium mixing bowl, combine peanut butter, maple syrup (or agave syrup), vanilla extract, and salt.
  2. Mix until well combined and smooth, achieving a creamy consistency.
  3. Taste and adjust sweetness if necessary by adding more maple syrup.
  4. Set aside while preparing the chocolate coating.
  5. In a small saucepan, combine chocolate chips and coconut oil.
  6. Melt over low heat, stirring continuously to avoid burning.
  7. Once melted and smooth, remove from heat and let cool slightly.
  8. Line a mini muffin tin with mini cupcake liners.
  9. Pour a thin layer of melted chocolate (about 1 tablespoon) into each liner.
  10. Add a scoop of peanut butter filling (about 1 tablespoon) on top of the chocolate layer.
  11. Pour another layer of melted chocolate on top, covering the filling completely.
  12. If desired, sprinkle crushed nuts on top before the chocolate sets.
  13. Tap the muffin tin gently on the counter to settle the chocolate.
  14. Refrigerate for at least 30 minutes or freeze for 15-20 minutes until set.
  15. Carefully remove the cups from the muffin tin by peeling away the liners.
  16. Enjoy immediately or store in an airtight container in the refrigerator for up to a week.
