- 1/4 cup maple syrup or agave syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup dairy-free chocolate chips
- 1 tablespoon coconut oil
- 1/2 cup crushed nuts (optional, for added crunch)
- Mini cupcake liners (for serving)
Instructions
- In a medium mixing bowl, combine peanut butter, maple syrup (or agave syrup), vanilla extract, and salt.
- Mix until well combined and smooth, achieving a creamy consistency.
- Taste and adjust sweetness if necessary by adding more maple syrup.
- Set aside while preparing the chocolate coating.
- In a small saucepan, combine chocolate chips and coconut oil.
- Melt over low heat, stirring continuously to avoid burning.
- Once melted and smooth, remove from heat and let cool slightly.
- Line a mini muffin tin with mini cupcake liners.
- Pour a thin layer of melted chocolate (about 1 tablespoon) into each liner.
- Add a scoop of peanut butter filling (about 1 tablespoon) on top of the chocolate layer.
- Pour another layer of melted chocolate on top, covering the filling completely.
- If desired, sprinkle crushed nuts on top before the chocolate sets.
- Tap the muffin tin gently on the counter to settle the chocolate.
- Refrigerate for at least 30 minutes or freeze for 15-20 minutes until set.
- Carefully remove the cups from the muffin tin by peeling away the liners.
- Enjoy immediately or store in an airtight container in the refrigerator for up to a week.
