Instructions

  1. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
  2. In a separate bowl, beat the eggs, then add the whole milk and vanilla extract. Mix until fully combined.
  3. Pour the wet mixture into the dry ingredients and gently fold together with a spatula or wooden spoon until just combined, leaving a few lumps.
  4. Add the melted butter to the dough and fold it in gently until incorporated.
  5. Cover the bowl with plastic wrap or a clean kitchen towel and let the dough rest for about 30 minutes.
  6. While the dough rests, prepare your frying station by filling a large, deep pot or heavy-bottomed skillet with 2-3 inches of vegetable oil. Heat the oil to 350°F (175°C).
  7. Prepare a plate lined with paper towels to drain the fried beignets.
  8. Once the oil is hot, scoop small amounts of dough and carefully drop them into the oil, frying 3-4 beignets at a time.
  9. Fry for 2-3 minutes on one side until golden brown, then flip and fry for another 2-3 minutes on the other side.
  10. Remove the beignets from the oil and place them on the paper towel-lined plate to drain.
  11. Repeat the frying process with the remaining dough, adjusting the heat as necessary to maintain oil temperature.
  12. Once all beignets are fried, toss them in powdered sugar until fully coated.
