  • 4 medium sweet potatoes
  • 1 lb ground turkey or beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 packet taco seasoning (or homemade)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Olive oil
  • Optional toppings: jalapeños, lime wedges, salsa

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly under running water and pat them dry.
  3. Poke several holes in each sweet potato with a fork.
  4. Drizzle olive oil over each sweet potato and sprinkle with salt.
  5. Place the sweet potatoes on the oven rack or a lined baking sheet. Bake for 45-60 minutes, or until tender.
  6. While the sweet potatoes bake, heat a large skillet over medium heat and add olive oil.
  7. Add the ground turkey or beef, breaking it apart as it cooks. Season with salt and pepper.
  8. Cook for 5-7 minutes until browned and cooked through.
  9. Stir in the taco seasoning, diced tomatoes, black beans, and corn. Mix well.
  10. Reduce heat to low and let simmer for 5-10 minutes.
  11. Remove the sweet potatoes from the oven and let cool for a few minutes.
  12. Slice each sweet potato down the center, creating a pocket.
  13. Gently push the ends towards the center to open them up.
  14. Scoop the taco filling into each sweet potato.
  15. Sprinkle shredded cheese on top and return to the oven for 5-10 minutes if you want melted cheese.
  16. Once the cheese is melted, remove from the oven and let cool slightly.
  17. Top with diced avocado, sour cream or Greek yogurt, and fresh cilantro.
  18. Add optional jalapeños or salsa if desired.
  19. Serve warm with lime wedges on the side.
