Instructions

  1. Rinse the Medjool dates under cold water to remove any dust or debris. Pat them dry with a paper towel.
  2. Using a sharp knife, carefully make a lengthwise slit in each date, creating a pocket for the filling.
  3. Remove the pit from each date, using the knife to help pry it out if necessary. Set the pitted dates aside on a plate.
  4. In a medium-sized mixing bowl, combine the softened cream cheese and crumbled blue cheese. Blend until smooth and creamy.
  5. Add the chopped walnuts (or pecans), honey, vanilla extract, salt, and black pepper. Mix until well combined. The mixture should be thick and spreadable.
