Ingredients
Scale
- 20 large Medjool dates
- 1 cup cream cheese, softened
- 1/2 cup crumbled blue cheese
- 1/2 cup chopped walnuts (or pecans)
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley or chives for garnish (optional)
Instructions
- Rinse the Medjool dates under cold water to remove any dust or debris. Pat them dry with a paper towel.
- Using a sharp knife, carefully make a lengthwise slit in each date, creating a pocket for the filling.
- Remove the pit from each date, using the knife to help pry it out if necessary. Set the pitted dates aside on a plate.
- In a medium-sized mixing bowl, combine the softened cream cheese and crumbled blue cheese. Blend until smooth and creamy.
- Add the chopped walnuts (or pecans), honey, vanilla extract, salt, and black pepper. Mix until well combined. The mixture should be thick and spreadable.
- Taste the filling and adjust the seasoning if necessary. Add more honey if you prefer it sweeter.
- Using a small spoon or a piping bag, fill each date with the cheese mixture, packing it in generously.
- Arrange the stuffed dates on a serving platter. Any leftover filling can be served on the side as a dip.
- Cover the platter with plastic wrap or foil and refrigerate for at least 30 minutes to allow the flavors to meld.
- If preparing in advance, chill for up to 2 hours, but take them out 10-15 minutes before serving to let them come to room temperature.
- Just before serving, sprinkle freshly chopped parsley or chives over the stuffed dates for color and freshness.
- Drizzle a little honey over the top for added sweetness and sheen.
- Arrange the dates on a beautiful serving platter, optionally serving with toothpicks for easy eating.
- Appreciate the beautiful presentation of your stuffed dates.
- Enjoy the combination of sweet, creamy, and crunchy textures in each bite.
- Feel free to experiment with different fillings, such as bacon bits or dried fruits!
