- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- Powdered sugar, for dusting (optional)
- Whipped cream, for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans, or line the bottoms with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, cream the softened butter and granulated sugar together on medium speed until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
- Mix in the vanilla extract until just combined.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
- Gently fold in the sliced strawberries and blueberries using a spatula.
- Evenly divide the batter between the two prepared cake pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for about 10 minutes, then turn them out onto a wire rack to cool completely.
- Place one layer on a serving plate or cake stand.
- Spread a layer of whipped cream or frosting on top of the first cake layer if desired.
- Place the second cake layer on top of the first.
- Top with additional fresh strawberries and blueberries in a decorative pattern.
- Lightly dust the top with powdered sugar if desired.
- Slice the cake into wedges and serve with a dollop of whipped cream on the side.
- Store any leftovers in an airtight container in the refrigerator for up to 3 days.
- Perfect for gatherings, birthdays, or a sweet treat at home!
Notes
- For a richer flavor, consider using vanilla bean paste instead of extract.
- You can substitute the buttermilk with a mixture of milk and vinegar if you don’t have buttermilk on hand.
- Feel free to add other berries or fruits to the batter for a mixed berry cake.
