  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans, or line the bottoms with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream the softened butter and granulated sugar together on medium speed until light and fluffy, about 3-4 minutes.
  5. Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
  6. Mix in the vanilla extract until just combined.
  7. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
  8. Gently fold in the sliced strawberries and blueberries using a spatula.
  9. Evenly divide the batter between the two prepared cake pans and smooth the tops.
  10. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the cakes cool in the pans for about 10 minutes, then turn them out onto a wire rack to cool completely.
  12. Place one layer on a serving plate or cake stand.
  13. Spread a layer of whipped cream or frosting on top of the first cake layer if desired.
  14. Place the second cake layer on top of the first.
  15. Top with additional fresh strawberries and blueberries in a decorative pattern.
  16. Lightly dust the top with powdered sugar if desired.
  17. Slice the cake into wedges and serve with a dollop of whipped cream on the side.
