- 1 cup of ice
- 1/2 cup of dragon fruit (fresh or frozen, diced)

- Fresh mint leaves for garnish (optional)
Instructions
- If using fresh dragon fruit, cut it in half, scoop out the flesh, and dice it into small cubes. For frozen dragon fruit, let it thaw for a few minutes until soft enough to cut. Set the diced dragon fruit aside in a bowl. Optionally, blend it lightly for a smoother texture.
- In a large mixing bowl or pitcher, combine the coconut milk and mango juice. Stir well until fully blended. If desired, add simple syrup to taste and mix well. Add the green coffee extract or cooled brewed green tea to the mixture and stir until combined.
- Fill a tall glass with ice. Pour the coconut milk and mango juice mixture over the ice, filling the glass about three-quarters full. Gently add the diced dragon fruit on top, either sprinkling or layering it for visual effect. Garnish with fresh mint leaves if desired.
