- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup bell peppers, diced (red and green for color)

- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 10–12 large flour tortillas
- Oil for frying (vegetable or canola)

Instructions
- In a large mixing bowl, combine the shredded chicken, black beans, corn, diced bell peppers, and chopped green onions. Mix well.
- Add the shredded cheese to the mixture.
- Season with cumin, chili powder, garlic powder, onion powder, and a pinch of salt and pepper. Mix until evenly distributed.
- Warm the flour tortillas in the microwave for about 10-15 seconds to make them pliable.
- Lay a tortilla flat on a clean surface. Spoon about 2-3 tablespoons of the filling mixture onto the center.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom, tucking in the sides as you go. Repeat with remaining tortillas and filling.
- In a large skillet or deep frying pan, heat about 1-2 inches of oil over medium heat.
- Carefully place a few egg rolls in the hot oil, frying for about 3-4 minutes on each side until golden brown and crispy.
- Use a slotted spoon to remove the egg rolls and place them on a plate lined with paper towels to drain excess oil.
- Repeat the frying process with the remaining egg rolls, adjusting the heat as necessary.
- Arrange the egg rolls on a serving platter.
- Serve with your choice of dipping sauces like sour cream, salsa, or guacamole.
