  • 1012 large flour tortillas

Instructions

  1. In a large mixing bowl, combine the shredded chicken, black beans, corn, diced bell peppers, and chopped green onions. Mix well.
  2. Add the shredded cheese to the mixture.
  3. Season with cumin, chili powder, garlic powder, onion powder, and a pinch of salt and pepper. Mix until evenly distributed.
  4. Warm the flour tortillas in the microwave for about 10-15 seconds to make them pliable.
  5. Lay a tortilla flat on a clean surface. Spoon about 2-3 tablespoons of the filling mixture onto the center.
  6. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom, tucking in the sides as you go. Repeat with remaining tortillas and filling.
  7. In a large skillet or deep frying pan, heat about 1-2 inches of oil over medium heat.
  8. Carefully place a few egg rolls in the hot oil, frying for about 3-4 minutes on each side until golden brown and crispy.
  9. Use a slotted spoon to remove the egg rolls and place them on a plate lined with paper towels to drain excess oil.
