Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus extra for dusting
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup finely chopped nuts (walnuts or pecans work great)

Instructions

  1. In a large mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy (about 2-3 minutes).
  2. Add in the vanilla extract and mix until well combined.
  3. In a separate bowl, whisk together the all-purpose flour and salt.
  4. Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined.
  5. Fold in the finely chopped nuts using a spatula.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  7. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Scoop out about a tablespoon of dough and roll it into a ball (about 1 inch in diameter).
  9. Place the cookie balls on the prepared baking sheet, leaving about 2 inches of space between each one.
  10. Repeat until all the dough is shaped into balls (about 24-30 cookies).
  11. Bake for 12-15 minutes, or until the bottoms are lightly golden.
  12. Let the cookies cool on the baking sheet for about 5 minutes.
  13. Transfer the cookies to a wire rack to cool completely.
  14. Once the cookies are completely cool, place powdered sugar in a shallow bowl.
  15. Gently roll each cookie in the powdered sugar until fully coated.
  16. Sift more powdered sugar over the cookies for an extra snowy finish, if desired.
  17. Arrange the cookies on a festive plate or in a decorative tin for serving.
