- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine or spaghetti
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup dry white wine (like Sauvignon Blanc)
- Juice of 1 lemon
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt for every 4 quarts of water).
- Add the linguine or spaghetti and cook according to package instructions until al dente (8-10 minutes). Stir occasionally to prevent sticking.
- Reserve about 1 cup of pasta water, then drain the rest in a colander. Set the drained pasta aside, keeping it warm with a kitchen towel.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
- Once melted, add minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant but not browned.
- Add shrimp in a single layer, season with salt and pepper, and cook for 2-3 minutes on one side until pink and opaque.
- Flip shrimp and cook for another 2-3 minutes until fully cooked. Remove from skillet and set aside.
- In the same skillet, pour in the dry white wine and scrape up any browned bits from the bottom.
- Simmer for 2-3 minutes until reduced slightly.
- Squeeze in lemon juice and stir to combine.
- Add the remaining 2 tablespoons of butter and stir until melted.
- Return cooked shrimp to the skillet, along with any accumulated juices. Stir to coat in the sauce.
- Add drained pasta and toss gently to coat. If dry, add reserved pasta water a tablespoon at a time until desired consistency is reached.
- Sprinkle chopped parsley over the dish and toss again.
- Serve immediately, garnished with additional parsley and grated Parmesan cheese if desired.
- Pair with crusty bread and a simple green salad for a complete meal.
