  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup dry white wine (like Sauvignon Blanc)
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt for every 4 quarts of water).
  2. Add the linguine or spaghetti and cook according to package instructions until al dente (8-10 minutes). Stir occasionally to prevent sticking.
  3. Reserve about 1 cup of pasta water, then drain the rest in a colander. Set the drained pasta aside, keeping it warm with a kitchen towel.
  4. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
  5. Once melted, add minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant but not browned.
  6. Add shrimp in a single layer, season with salt and pepper, and cook for 2-3 minutes on one side until pink and opaque.
  7. Flip shrimp and cook for another 2-3 minutes until fully cooked. Remove from skillet and set aside.
  8. In the same skillet, pour in the dry white wine and scrape up any browned bits from the bottom.
  9. Simmer for 2-3 minutes until reduced slightly.
  10. Squeeze in lemon juice and stir to combine.
  11. Add the remaining 2 tablespoons of butter and stir until melted.
  12. Return cooked shrimp to the skillet, along with any accumulated juices. Stir to coat in the sauce.
  13. Add drained pasta and toss gently to coat. If dry, add reserved pasta water a tablespoon at a time until desired consistency is reached.
  14. Sprinkle chopped parsley over the dish and toss again.
  15. Serve immediately, garnished with additional parsley and grated Parmesan cheese if desired.
  16. Pair with crusty bread and a simple green salad for a complete meal.
