  • 12 lasagna noodles
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 1 cup spinach, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 cups ricotta cheese
  • 1 egg
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the lasagna noodles and cook according to package instructions (about 8-10 minutes) until al dente.
  3. Drain the noodles and lay them flat on a clean kitchen towel or parchment paper.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add chopped onion and sauté for 3-4 minutes until translucent.
  6. Add minced garlic and diced red bell pepper; sauté for another 2-3 minutes until softened.
  7. Add shrimp and cook for 3-4 minutes until pink and opaque.
  8. Stir in chopped spinach, oregano, basil, and red pepper flakes (if using). Season with salt and pepper. Cook for an additional 2 minutes until spinach wilts.
  9. Remove from heat and let cool slightly.
  10. In a medium bowl, combine ricotta cheese and egg. Mix until smooth.
  11. Season with a pinch of salt and pepper.
  12. Preheat oven to 375°F (190°C).
  13. Spread a thin layer of marinara sauce in a 9×13 inch baking dish.
  14. Place 3 lasagna noodles side by side over the sauce.
  15. Spread half of the ricotta mixture over the noodles, followed by half of the shrimp mixture.
  16. Pour a third of the marinara sauce over the shrimp mixture and sprinkle with 1 cup of mozzarella cheese.
  17. Repeat layering: add 3 more noodles, remaining ricotta, remaining shrimp, another third of marinara, and another cup of mozzarella.
  18. For the final layer, place the last 3 noodles on top, cover with remaining marinara, and sprinkle with remaining mozzarella and Parmesan cheese.
  19. Cover the baking dish with aluminum foil, ensuring it doesn’t touch the cheese.
  20. Bake for 25 minutes.
  21. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden brown.
  22. Let sit for 10-15 minutes before slicing.
  23. Cut into squares and serve with a sprinkle of fresh basil or parsley.
  24. Pair with a side salad or garlic bread for a complete meal.
