- 1 medium red onion, finely chopped
- 1 medium cucumber, diced
- 1–2 jalapeño peppers, finely chopped (adjust to taste)
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh cilantro, chopped
- Salt, to taste
- Black pepper, to taste

Instructions
- Rinse the shrimp under cold water to remove any residual sand or debris.
- Place the shrimp in a pot of boiling water and cook until they turn pink and opaque, about 2-3 minutes. Avoid overcooking.
- Transfer the cooked shrimp to a bowl of ice water to stop the cooking process. Once cool, drain and chop into bite-sized pieces.
- In a large mixing bowl, pour in the fresh lime juice.
- Add the finely chopped red onion to the lime juice and let it soak.
- Add the diced cucumber for a refreshing crunch.
- Finely chop the jalapeño peppers and add them to the bowl, adjusting for spice preference.
- Toss in the halved cherry tomatoes for sweetness and color.
- Add the chopped cilantro for a fresh flavor.
- Gently fold the chopped shrimp into the marinade mixture, ensuring they are well-coated.
- Season with salt and black pepper to taste, mixing gently.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to marinate.
- After marinating, stir gently and adjust seasoning if necessary.
- Serve in individual bowls or a large serving dish, garnished with additional cilantro and lime wedges.
- Enjoy chilled with tortilla chips on the side.
