- Add the eggs one at a time, mixing well after each addition. Then, mix in the red food coloring and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet mixture in three parts, mixing on low speed until just combined.
- Fold in the semi-sweet chocolate chips and optional white chocolate chips.
- Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
- Line a baking sheet with parchment paper.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Slightly flatten the tops with your fingers.
- Bake in the preheated oven for 10-12 minutes, keeping an eye on them to ensure the edges are set while the centers remain soft.
