  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup dry white wine (like Sauvignon Blanc)
  • 1 lemon, juiced and zested
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • 8 ounces linguine or spaghetti
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. Season the shrimp with salt and pepper in a large bowl and set aside.
  3. Bring a large pot of salted water to a boil.
  4. Add the linguine or spaghetti and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally.
  5. Reserve about 1 cup of the pasta cooking water, then drain the pasta in a colander without rinsing.
  6. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat until melted and bubbling.
  7. Add minced garlic and sauté for 1-2 minutes until fragrant, stirring constantly.
  8. Sprinkle in red pepper flakes and stir.
  9. Pour in the dry white wine and bring to a simmer, cooking for 2-3 minutes to reduce slightly.
  10. Add the shrimp to the skillet and cook for 2-3 minutes on one side until pink, then flip and cook for another 2-3 minutes until opaque.
  11. Stir in lemon juice and zest, mixing well.
  12. Add the drained pasta to the skillet and toss to coat with the sauce.
  13. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
  14. Stir in the remaining 2 tablespoons of butter and chopped parsley. Adjust seasoning with salt and pepper if needed.
  15. Plate the shrimp scampi in shallow bowls and sprinkle with grated Parmesan cheese if desired.
  16. Garnish with additional parsley and a lemon wedge. Serve immediately.
