- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup dry white wine (like Sauvignon Blanc)
- 1 lemon, juiced and zested
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
- 8 ounces linguine or spaghetti
- Grated Parmesan cheese, for serving (optional)
Instructions
- Rinse the shrimp under cold water and pat dry with paper towels.
- Season the shrimp with salt and pepper in a large bowl and set aside.
- Bring a large pot of salted water to a boil.
- Add the linguine or spaghetti and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally.
- Reserve about 1 cup of the pasta cooking water, then drain the pasta in a colander without rinsing.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat until melted and bubbling.
- Add minced garlic and sauté for 1-2 minutes until fragrant, stirring constantly.
- Sprinkle in red pepper flakes and stir.
- Pour in the dry white wine and bring to a simmer, cooking for 2-3 minutes to reduce slightly.
- Add the shrimp to the skillet and cook for 2-3 minutes on one side until pink, then flip and cook for another 2-3 minutes until opaque.
- Stir in lemon juice and zest, mixing well.
- Add the drained pasta to the skillet and toss to coat with the sauce.
- If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
- Stir in the remaining 2 tablespoons of butter and chopped parsley. Adjust seasoning with salt and pepper if needed.
- Plate the shrimp scampi in shallow bowls and sprinkle with grated Parmesan cheese if desired.
- Garnish with additional parsley and a lemon wedge. Serve immediately.
