  • Author: Dottie
  • Total Time: 10 minutes
  • Yield: 1 serving 1x

Description

Enjoy a vibrant Pink Coconut Iced Latte, combining brewed coffee, creamy coconut milk, and fruity pink syrup. This refreshing drink is perfect for warm days and can be customized to your taste, making it a delightful treat for any occasion.

Ingredients

Scale
  • 1 cup of brewed coffee (cooled)
  • 1 cup of coconut milk (canned or carton)
  • 1/4 cup of pink syrup (such as raspberry or strawberry syrup)
  • 1 tablespoon of vanilla extract
  • 1 tablespoon of sweetened condensed milk (optional, for extra sweetness)
  • Ice cubes
  • Shredded coconut (for garnish)
  • Fresh raspberries or strawberries (for garnish, optional)

Instructions

  1. Brew your favorite coffee (about 1 cup) and let it cool to room temperature. For quicker cooling, place it in the fridge. Optionally, add 1/2 teaspoon of vanilla extract for extra flavor.
  2. In a bowl or measuring cup, mix 1 cup of coconut milk with 1/4 cup of pink syrup. Adjust the syrup to your taste. For added creaminess, stir in 1 tablespoon of sweetened condensed milk (optional). Add 1 tablespoon of vanilla extract and mix well.
  3. Fill a tall glass halfway with ice cubes. Pour the cooled coffee over the ice, filling the glass about halfway. Slowly pour the coconut milk mixture over the coffee to create a layered effect. Stir gently to combine slightly, keeping the pink color on top.
  4. Sprinkle shredded coconut on top for a tropical touch. Optionally, add fresh raspberries or strawberries for color and flavor.
  5. Serve immediately with a straw or spoon. Enjoy your Pink Coconut Iced Latte on a sunny afternoon or as a refreshing pick-me-up. Store any leftover coconut milk mixture in the fridge for a couple of days, stirring before use.

Notes

  • Feel free to experiment with different syrups like mango or passion fruit for a unique twist.
  • Toasting the shredded coconut in a dry skillet adds crunch and a nutty flavor.
