  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups marinara sauce
  • 1 1/2 cups sliced pepperoni
  • Extra mozzarella cheese for topping (optional)
  • Fresh basil for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally to prevent sticking.
  2. Drain the noodles in a colander and rinse under cold water. Lay them flat on a clean kitchen towel or parchment paper to cool and dry slightly.
  3. In a large mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella cheese, 1/2 cup of grated Parmesan cheese, and the egg.
  4. Add Italian seasoning, garlic powder, salt, and black pepper to the cheese mixture. Mix until well combined and creamy.
  5. Preheat your oven to 375°F (190°C). Spread 1/2 cup of marinara sauce evenly on the bottom of a 9×13 inch baking dish.
  6. Lay one lasagna noodle flat. Spoon 2-3 tablespoons of cheese filling onto the noodle, spreading it evenly.
  7. Place a few slices of pepperoni on top of the cheese filling.
  8. Carefully roll the noodle from one end to the other, seam-side down in the baking dish. Repeat with remaining noodles, filling, and pepperoni.
  9. Pour the remaining marinara sauce over the rolls, ensuring they are evenly covered.
  10. Sprinkle the remaining shredded mozzarella cheese over the top. Add extra cheese if desired.
  11. Cover the baking dish with aluminum foil and bake for 25 minutes.
  12. Remove the foil and bake for an additional 10-15 minutes, until cheese is bubbly and golden brown.
  13. Allow the lasagna rolls to sit for 5-10 minutes before serving.
  14. Sprinkle fresh basil on top if desired. Serve hot and enjoy!

  • You can prepare the lasagna rolls a day in advance. Assemble them in the baking dish, cover tightly with foil, and refrigerate until ready to bake.
