- 12 lasagna noodles
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups marinara sauce
- 1 1/2 cups sliced pepperoni
- Extra mozzarella cheese for topping (optional)
- Fresh basil for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally to prevent sticking.
- Drain the noodles in a colander and rinse under cold water. Lay them flat on a clean kitchen towel or parchment paper to cool and dry slightly.
- In a large mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella cheese, 1/2 cup of grated Parmesan cheese, and the egg.
- Add Italian seasoning, garlic powder, salt, and black pepper to the cheese mixture. Mix until well combined and creamy.
- Preheat your oven to 375°F (190°C). Spread 1/2 cup of marinara sauce evenly on the bottom of a 9×13 inch baking dish.
- Lay one lasagna noodle flat. Spoon 2-3 tablespoons of cheese filling onto the noodle, spreading it evenly.
- Place a few slices of pepperoni on top of the cheese filling.
- Carefully roll the noodle from one end to the other, seam-side down in the baking dish. Repeat with remaining noodles, filling, and pepperoni.
- Pour the remaining marinara sauce over the rolls, ensuring they are evenly covered.
- Sprinkle the remaining shredded mozzarella cheese over the top. Add extra cheese if desired.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until cheese is bubbly and golden brown.
- Allow the lasagna rolls to sit for 5-10 minutes before serving.
- Sprinkle fresh basil on top if desired. Serve hot and enjoy!
Notes
- You can prepare the lasagna rolls a day in advance. Assemble them in the baking dish, cover tightly with foil, and refrigerate until ready to bake.
