- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda

- 24 mini peanut butter cups, unwrapped
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the peanut butter and granulated sugar. Blend until smooth and creamy.
- Mix in the egg and vanilla extract until well combined.
- Add the baking soda and salt, stirring until fully incorporated.
- Gently fold in the chocolate chips until evenly distributed.
- Line a baking sheet with parchment paper.
- Scoop out portions of dough and roll them into 1-inch balls. Place them on the baking sheet, leaving 2 inches of space between each.
- Press down in the center of each dough ball to create a small dimple.
- Bake for 10-12 minutes until the edges are set and slightly golden.
- Immediately press a mini peanut butter cup into the center of each cookie after removing them from the oven.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Store in an airtight container at room temperature for up to a week or freeze for longer storage.
