  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place chicken breasts between two sheets of plastic wrap or parchment paper. Pound to an even thickness of about 1 inch.
  3. Season both sides of the chicken breasts with salt and pepper.
  4. In three shallow bowls, whisk eggs and Dijon mustard in the first bowl. In the second bowl, mix Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, and a pinch of salt and pepper. Leave the third bowl empty.
  5. Dip each chicken breast into the egg mixture, then into the breadcrumb mixture, ensuring thorough coating. Place breaded chicken on a plate.
  6. In a large oven-safe skillet, heat olive oil over medium-high heat until shimmering.
  7. Add breaded chicken to the skillet and sear for 3-4 minutes on each side until golden brown.
  8. Move the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
  9. (Optional) Preheat another oven to 400°F (200°C). Chop vegetables, toss with olive oil, salt, pepper, and Italian seasoning, and roast for 20-25 minutes.
  10. (Optional) Boil 2 pounds of chopped potatoes in salted water until fork-tender. Drain, then mash with butter, milk, and minced garlic. Season with salt and pepper.
  11. Remove chicken from the oven and let it rest for 5 minutes.
  12. Serve with garlic mashed potatoes and roasted vegetables.
  13. Sprinkle with fresh parsley and serve with lemon wedges.
