  • 2 large eggs

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup olive oil (for frying)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh parsley (for garnish)

Instructions

  1. Butterfly or pound the chicken breasts to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
  2. Place flour in a shallow dish.
  3. Whisk eggs in a second shallow dish.
  4. In a third shallow dish, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, and a pinch of salt and pepper.
  5. Dredge each chicken breast in flour, then dip in egg wash, and finally coat with the breadcrumb mixture, pressing gently to adhere.
  6. Heat olive oil in a large skillet over medium heat.
  7. Cook the breaded chicken for 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C). Transfer to a paper towel-lined plate.
  8. Preheat oven to 375°F (190°C).
  9. Spread a thin layer of marinara sauce in a baking dish, place the cooked chicken on top, cover with remaining marinara sauce, and sprinkle with mozzarella cheese.
  10. Bake for 20-25 minutes until cheese is melted and bubbly. Broil for an additional 2-3 minutes for a golden top if desired.
  11. Sprinkle chopped fresh parsley over the chicken before serving. Serve hot with pasta, salad, or garlic bread.
