- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably Italian-style)
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/2 cup olive oil (for frying)
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh parsley (for garnish)
Instructions
- Butterfly or pound the chicken breasts to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
- Place flour in a shallow dish.
- Whisk eggs in a second shallow dish.
- In a third shallow dish, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, and a pinch of salt and pepper.
- Dredge each chicken breast in flour, then dip in egg wash, and finally coat with the breadcrumb mixture, pressing gently to adhere.
- Heat olive oil in a large skillet over medium heat.
- Cook the breaded chicken for 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C). Transfer to a paper towel-lined plate.
- Preheat oven to 375°F (190°C).
- Spread a thin layer of marinara sauce in a baking dish, place the cooked chicken on top, cover with remaining marinara sauce, and sprinkle with mozzarella cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly. Broil for an additional 2-3 minutes for a golden top if desired.
- Sprinkle chopped fresh parsley over the chicken before serving. Serve hot with pasta, salad, or garlic bread.
