- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 cup Nutella (or any hazelnut spread)
- 1 egg (for egg wash, optional)
- Flaky sea salt (for topping, optional)
Instructions
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set this mixture aside for later.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed. Beat until the mixture is light and fluffy, about 2-3 minutes.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing to keep the cookies soft and chewy.
- Fold in the semi-sweet chocolate chips using a spatula or wooden spoon.
- Cover the bowl with plastic wrap or transfer the dough to an airtight container.
- Refrigerate the dough for at least 30 minutes. For best results, chill for a couple of hours or overnight.
- Place the Nutella in a small bowl. If too thick, microwave for 10-15 seconds to soften.
- Set the Nutella aside until ready to assemble the cookie pie.
- Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish or round cake pan with non-stick spray or butter.
- Take about two-thirds of the chilled cookie dough and press it evenly into the bottom of the prepared pie dish, creating a slight lip around the edges.
- Spread the Nutella evenly over the cookie dough base.
- Crumble the remaining one-third of the cookie dough over the Nutella filling, allowing some Nutella to peek through.
- (Optional) Beat the additional egg and brush it over the top for a golden finish.
- Sprinkle a pinch of flaky sea salt on top.
- Place the assembled cookie pie in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the center is set but still slightly soft.
