  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup Nutella (or any hazelnut spread)
  • 1 egg (for egg wash, optional)
  • Flaky sea salt (for topping, optional)

Instructions

  1. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set this mixture aside for later.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed. Beat until the mixture is light and fluffy, about 2-3 minutes.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until well combined.
  4. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing to keep the cookies soft and chewy.
  5. Fold in the semi-sweet chocolate chips using a spatula or wooden spoon.
  6. Cover the bowl with plastic wrap or transfer the dough to an airtight container.
  7. Refrigerate the dough for at least 30 minutes. For best results, chill for a couple of hours or overnight.
  8. Place the Nutella in a small bowl. If too thick, microwave for 10-15 seconds to soften.
  9. Set the Nutella aside until ready to assemble the cookie pie.
  10. Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish or round cake pan with non-stick spray or butter.
  11. Take about two-thirds of the chilled cookie dough and press it evenly into the bottom of the prepared pie dish, creating a slight lip around the edges.
