Refreshing Mint Mojito Iced Coffee: strong coffee meets fresh mint, lime, and club soda. Add rum for an alcoholic version!

- 1 cup strong brewed coffee, cooled
- 1/4 cup fresh mint leaves, plus extra for garnish
- 2 tablespoons granulated sugar (or simple syrup to taste)
- 1 tablespoon lime juice, freshly squeezed
- 1/4 cup milk (dairy or non-dairy), or to taste
- 1/4 cup club soda, chilled
- Ice cubes
- Optional: 1 ounce white rum (for an alcoholic version)
Instructions
- Prepare the Mint Infusion: In a sturdy glass or cocktail shaker, combine mint leaves and sugar. Gently muddle for about 30 seconds, bruising the mint to release its oils. Add lime juice.
- Add Coffee: Pour cooled coffee into the glass or shaker.
- Optional: Add Rum: If using, add white rum.
- Shake (or Stir): If using a shaker, add ice, seal, and shake vigorously for 15-20 seconds. If not, stir ingredients together in the glass with ice.
- Prepare Serving Glass: Fill a tall glass with ice.
- Strain (if Shaking): Strain the mixture into the prepared glass filled with ice. If stirred, pour directly into the glass.
- Add Milk: Pour in milk to your liking.
- Top with Club Soda: Gently top with chilled club soda.
- Garnish: Garnish with a sprig of fresh mint and a lime wedge.
