Mint Mojito Iced Coffee: The Ultimate Summer Drink Recipe

  • Total Time: 5 minutes
  • Yield: 1 serving 1x

Description

Refreshing Mint Mojito Iced Coffee: strong coffee meets fresh mint, lime, and club soda. Add rum for an alcoholic version!

Ingredients

Scale
  • 1 cup strong brewed coffee, cooled
  • 1/4 cup fresh mint leaves, plus extra for garnish
  • 2 tablespoons granulated sugar (or simple syrup to taste)
  • 1 tablespoon lime juice, freshly squeezed
  • 1/4 cup milk (dairy or non-dairy), or to taste
  • 1/4 cup club soda, chilled
  • Ice cubes
  • Optional: 1 ounce white rum (for an alcoholic version)

Instructions

  1. Prepare the Mint Infusion: In a sturdy glass or cocktail shaker, combine mint leaves and sugar. Gently muddle for about 30 seconds, bruising the mint to release its oils. Add lime juice.
  2. Add Coffee: Pour cooled coffee into the glass or shaker.
  3. Optional: Add Rum: If using, add white rum.
  4. Shake (or Stir): If using a shaker, add ice, seal, and shake vigorously for 15-20 seconds. If not, stir ingredients together in the glass with ice.
  5. Prepare Serving Glass: Fill a tall glass with ice.
  6. Strain (if Shaking): Strain the mixture into the prepared glass filled with ice. If stirred, pour directly into the glass.
  7. Add Milk: Pour in milk to your liking.
  8. Top with Club Soda: Gently top with chilled club soda.
  9. Garnish: Garnish with a sprig of fresh mint and a lime wedge.

Notes

  • Adjust sweetness, tanginess, and creaminess to your preference.
  • Use fresh, high-quality ingredients for the best flavor.
  • Cool the coffee completely before adding it to avoid melting the ice.
  • Don’t over-muddle the mint, as it can release bitter compounds.
  • Experiment with different flavors and ingredients, such as vanilla extract, cinnamon, or orange juice.
  • Prepare the mint infusion ahead of time and store it in the refrigerator for up to 24 hours.
  • For a spicy kick, add a pinch of cayenne pepper or a few slices of jalapeño to the muddled mint.
  • Use coconut milk instead of regular milk for a tropical twist.
  • Add a handful of fresh berries to the muddled mint for a fruity flavor.
  • Add a tablespoon of cocoa powder or chocolate syrup to the coffee for a decadent treat.
  • Add a few drops of lavender extract to the coffee for a floral and aromatic flavor.
