  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crumbled blue cheese
  • 1/4 cup finely chopped green onions
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup chopped pecans (or walnuts)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 1 package of mini pretzel crisps or crackers (for serving)

Instructions

  1. In a large mixing bowl, add the softened cream cheese. Make sure it’s at room temperature for easy mixing.
  2. Using a hand mixer or a spatula, beat the cream cheese until it’s smooth and creamy (about 1-2 minutes).
  3. Add the shredded sharp cheddar cheese and crumbled blue cheese to the bowl.
  4. Incorporate the finely chopped green onions and red bell pepper.
  5. Sprinkle in the garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  6. Fold in the chopped pecans (or walnuts) for added texture and flavor.
  7. Cover the bowl with plastic wrap or a lid.
  8. Place the bowl in the refrigerator and let it chill for at least 1 hour.
  9. After chilling, take the mixture out of the refrigerator.
  10. Using a small cookie scoop or your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball shape. Repeat until all the mixture is shaped into balls (about 20-25 bites).
  11. Place the balls on a baking sheet lined with parchment paper.
  12. In a shallow dish, spread out the chopped fresh parsley.
  13. Roll each cheeseball bite in the parsley until fully coated.
  14. Return the coated bites to the baking sheet and sprinkle any leftover parsley on top.
  15. Arrange the cheeseball bites on a serving platter.
  16. Place a bowl of mini pretzel crisps or crackers next to the bites for dipping.
  17. Optionally, drizzle honey or balsamic glaze over the bites for added flavor.
  18. Use toothpicks for easy serving.
  19. If you have any leftovers, store them in an airtight container in the refrigerator for up to 3 days.
