- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1/2 cup crumbled blue cheese
- 1/4 cup finely chopped green onions
- 1/4 cup finely chopped red bell pepper
- 1/4 cup chopped pecans (or walnuts)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh parsley, chopped (for garnish)
- 1 package of mini pretzel crisps or crackers (for serving)
Instructions
- In a large mixing bowl, add the softened cream cheese. Make sure its at room temperature for easy mixing.
- Using a hand mixer or a spatula, beat the cream cheese until its smooth and creamy (about 1-2 minutes).
- Add the shredded sharp cheddar cheese and crumbled blue cheese to the bowl.
- Incorporate the finely chopped green onions and red bell pepper.
- Sprinkle in the garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Fold in the chopped pecans (or walnuts) for added texture and flavor.
- Cover the bowl with plastic wrap or a lid.
- Place the bowl in the refrigerator and let it chill for at least 1 hour.
- After chilling, take the mixture out of the refrigerator.
- Using a small cookie scoop or your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball shape. Repeat until all the mixture is shaped into balls (about 20-25 bites).
- Place the balls on a baking sheet lined with parchment paper.
- In a shallow dish, spread out the chopped fresh parsley.
- Roll each cheeseball bite in the parsley until fully coated.
- Return the coated bites to the baking sheet and sprinkle any leftover parsley on top.
- Arrange the cheeseball bites on a serving platter.
- Place a bowl of mini pretzel crisps or crackers next to the bites for dipping.
- Optionally, drizzle honey or balsamic glaze over the bites for added flavor.
- Use toothpicks for easy serving.
- If you have any leftovers, store them in an airtight container in the refrigerator for up to 3 days.
