  • 1/2 cup unsalted butter, softened
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup green onions, chopped (for garnish)
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Fill a large pot with water and add a generous pinch of salt. Place the cubed russet potatoes into the pot and bring the water to a boil over medium-high heat. Once boiling, reduce the heat to medium and let the potatoes simmer for about 15-20 minutes, or until fork-tender. Drain the potatoes in a colander and let them sit for a few minutes to allow excess moisture to evaporate.
  2. In a large mixing bowl, add the drained potatoes. Using a potato masher or hand mixer, mash the potatoes until they reach your desired creaminess. Add the softened butter and mix until fully incorporated. Pour in the sour cream and milk, stirring until creamy. Sprinkle in the garlic powder, onion powder, and season with salt and pepper. Adjust seasoning to taste.
  3. Fold in the shredded cheddar cheese and grated Parmesan cheese into the mashed potato mixture. Transfer the mixture into a greased 9×13 inch baking dish and spread it out evenly.
  4. If desired, mix the breadcrumbs with a tablespoon of melted butter in a small bowl. Evenly sprinkle the breadcrumb mixture over the top of the mashed potatoes. Optionally, add more shredded cheddar cheese on top.
  5. Preheat your oven to 350°F (175°C). Once preheated, place the baking dish in the oven and bake for about 25-30 minutes, until the top is golden brown and the edges are bubbling. Remove from the oven and let cool for 5-10 minutes.
  6. Sprinkle the chopped green onions over the top before serving. Use a large spoon or spatula to scoop out portions and serve warm as a side dish or main course.
