- 1 pound of boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 8 ounces of pasta (fettuccine or penne)
- Fresh basil leaves, for garnish
- Red pepper flakes, optional for heat
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts.
- Cook for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
- Remove the chicken from the skillet and cover with aluminum foil to keep warm.
- In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 1 minute until fragrant.
- Add Italian seasoning and cherry tomatoes, stirring to combine. Cook for 3-4 minutes until tomatoes soften.
- Pour in heavy cream and chicken broth, stirring well. Bring to a gentle simmer for about 5 minutes until slightly thickened.
- Stir in grated Parmesan cheese until fully melted and incorporated.
- In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente.
- Reserve 1 cup of pasta water, then drain the rest.
- Slice the cooked chicken into strips. Add it back to the skillet with the sauce, stirring to coat.
- Add the drained pasta to the skillet, tossing until well coated. Adjust sauce consistency with reserved pasta water if needed.
- Taste and adjust seasoning with salt, pepper, or red pepper flakes.
- Remove the skillet from heat once everything is combined and heated through.
- Serve in bowls, garnished with fresh basil leaves.
- Optionally, sprinkle extra Parmesan cheese on top before serving.
