  • 1 pound of boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 8 ounces of pasta (fettuccine or penne)
  • Fresh basil leaves, for garnish
  • Red pepper flakes, optional for heat

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts.
  3. Cook for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
  4. Remove the chicken from the skillet and cover with aluminum foil to keep warm.
  5. In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 1 minute until fragrant.
  6. Add Italian seasoning and cherry tomatoes, stirring to combine. Cook for 3-4 minutes until tomatoes soften.
  7. Pour in heavy cream and chicken broth, stirring well. Bring to a gentle simmer for about 5 minutes until slightly thickened.
  8. Stir in grated Parmesan cheese until fully melted and incorporated.
  9. In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente.
  10. Reserve 1 cup of pasta water, then drain the rest.
  11. Slice the cooked chicken into strips. Add it back to the skillet with the sauce, stirring to coat.
  12. Add the drained pasta to the skillet, tossing until well coated. Adjust sauce consistency with reserved pasta water if needed.
  13. Taste and adjust seasoning with salt, pepper, or red pepper flakes.
  14. Remove the skillet from heat once everything is combined and heated through.
  15. Serve in bowls, garnished with fresh basil leaves.
  16. Optionally, sprinkle extra Parmesan cheese on top before serving.
