Ingredients
Scale
- 1 pound of fresh salmon fillet, skin removed
- 8 slices of thick-cut bacon
- 1/4 cup pure maple syrup
- 1/4 cup bourbon
- 2 tablespoons Dijon mustard
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon chopped fresh parsley (for garnish)
- Wooden skewers (soaked in water for 30 minutes)
Instructions
- Cut the salmon fillet into bite-sized pieces, about 1 to 1.5 inches in size, aiming for around 20 pieces.
- In a large mixing bowl, place the salmon pieces.
- In a separate bowl, whisk together the maple syrup, bourbon, Dijon mustard, soy sauce, garlic powder, black pepper, and salt until well blended.
- Pour the marinade over the salmon pieces and gently toss to coat. Let it marinate for 15-20 minutes (or up to an hour in the refrigerator).
- Preheat your oven to 400°F (200°C).
- Cut the bacon slices in half. Optionally, partially cook the bacon in a skillet over medium heat for 3-4 minutes for extra crispiness.
- Wrap each marinated salmon piece with a half slice of bacon, securing it with a soaked wooden skewer. Repeat for all pieces.
- Arrange the wrapped salmon bites on a baking sheet lined with parchment paper, leaving space between each piece.
- Bake in the preheated oven for 15-20 minutes, checking at 15 minutes for doneness. The bacon should be golden brown and crispy, and the salmon should be cooked through.
- For an extra crispy finish, switch the oven to broil for the last 2-3 minutes, watching closely to prevent burning.
- In a small saucepan, simmer any remaining marinade over medium heat for 5-7 minutes until it thickens slightly.
- Brush the reduced glaze over the baked salmon bites for added flavor and shine.
- Transfer the bites to a serving platter and sprinkle with chopped parsley for garnish.
- Serve warm with toothpicks for easy eating. Enjoy as an appetizer or snack!
- Store any leftovers in an airtight container in the refrigerator for up to 2 days.
Notes
- Adjust the marinating time based on your schedule; longer marination enhances flavor.
- For a spicier kick, consider adding a pinch of cayenne pepper to the marinade.
- These bites are best enjoyed fresh but can be reheated in the oven to maintain crispiness.
