  • Author: Dottie
  • Total Time: 40 minutes
  • Yield: 20 bites 1x

Description

Savor the deliciousness of Bacon-Wrapped Salmon Bites, featuring tender salmon marinated in a sweet bourbon glaze, wrapped in crispy bacon, and baked to perfection. Ideal for appetizers or snacks, these bites are sure to impress!

Ingredients

Scale
  • 1 pound of fresh salmon fillet, skin removed
  • 8 slices of thick-cut bacon
  • 1/4 cup pure maple syrup
  • 1/4 cup bourbon
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon chopped fresh parsley (for garnish)
  • Wooden skewers (soaked in water for 30 minutes)

Instructions

  1. Cut the salmon fillet into bite-sized pieces, about 1 to 1.5 inches in size, aiming for around 20 pieces.
  2. In a large mixing bowl, place the salmon pieces.
  3. In a separate bowl, whisk together the maple syrup, bourbon, Dijon mustard, soy sauce, garlic powder, black pepper, and salt until well blended.
  4. Pour the marinade over the salmon pieces and gently toss to coat. Let it marinate for 15-20 minutes (or up to an hour in the refrigerator).
  5. Preheat your oven to 400°F (200°C).
  6. Cut the bacon slices in half. Optionally, partially cook the bacon in a skillet over medium heat for 3-4 minutes for extra crispiness.
  7. Wrap each marinated salmon piece with a half slice of bacon, securing it with a soaked wooden skewer. Repeat for all pieces.
  8. Arrange the wrapped salmon bites on a baking sheet lined with parchment paper, leaving space between each piece.
  9. Bake in the preheated oven for 15-20 minutes, checking at 15 minutes for doneness. The bacon should be golden brown and crispy, and the salmon should be cooked through.
  10. For an extra crispy finish, switch the oven to broil for the last 2-3 minutes, watching closely to prevent burning.
  11. In a small saucepan, simmer any remaining marinade over medium heat for 5-7 minutes until it thickens slightly.
  12. Brush the reduced glaze over the baked salmon bites for added flavor and shine.
  13. Transfer the bites to a serving platter and sprinkle with chopped parsley for garnish.
  14. Serve warm with toothpicks for easy eating. Enjoy as an appetizer or snack!
  15. Store any leftovers in an airtight container in the refrigerator for up to 2 days.

Notes

  • Adjust the marinating time based on your schedule; longer marination enhances flavor.
  • For a spicier kick, consider adding a pinch of cayenne pepper to the marinade.
  • These bites are best enjoyed fresh but can be reheated in the oven to maintain crispiness.
