Ingredients
Scale
- 1 pound Brussels sprouts, trimmed and halved
- 6 slices of thick-cut bacon, chopped
- 1/4 cup pure maple syrup
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
- 1/4 cup chopped pecans (optional, for added crunch)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the Brussels sprouts under cold water, trim the ends, and cut them in half. Remove any wilted or damaged outer leaves.
- In a large mixing bowl, combine the halved Brussels sprouts with olive oil, salt, black pepper, garlic powder, and red pepper flakes (if using). Toss until evenly coated.
- In a large skillet over medium heat, add the chopped bacon and cook until crispy, about 6-8 minutes, stirring occasionally. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving about 1 tablespoon of bacon fat in the skillet.
- Spread the seasoned Brussels sprouts evenly on a large baking sheet in a single layer. Drizzle the maple syrup over the sprouts and sprinkle the crispy bacon on top. Toss gently to combine.
- Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the Brussels sprouts are golden brown and crispy on the outside, tender on the inside.
- If using, sprinkle chopped pecans over the roasted Brussels sprouts for added crunch.
- Garnish with chopped parsley before serving.
Notes
- Choose firm, bright green Brussels sprouts for the best flavor.
- You can prepare the Brussels sprouts and bacon separately ahead of time and combine them just before roasting.
- Adjust the amount of maple syrup to your sweetness preference.
