- 2 ripe bananas
- 1 ripe mango, peeled and diced
- 1 cup plain yogurt (preferably Greek for creaminess)
- 1 cup milk (almond or coconut milk for a dairy-free option)
- 2 tablespoons honey or maple syrup (adjust based on sweetness preference)
- 1 teaspoon ground cardamom (optional, for added flavor)
- 1 tablespoon lemon juice (to balance the sweetness)
- Ice cubes (optional, for a chilled lassi)
- Mint leaves (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel the bananas and slice them in half lengthwise.
- Line a baking sheet with parchment paper and place the banana halves cut side up.
- Drizzle a little honey or maple syrup over the bananas and sprinkle with cinnamon if desired.
- Roast the bananas for about 15-20 minutes, or until golden brown and caramelized.
- Remove from the oven and let cool for a few minutes.
- Slice the ripe mango in half, avoiding the pit.
- Score the flesh in a crosshatch pattern and scoop out the diced mango into a bowl.
- Optionally, add a squeeze of lemon juice to the mango.
- In a blender, add the roasted bananas first.
- Add the diced mango to the blender.
- Pour in the cup of plain yogurt.
- Add the cup of milk (adjust for thickness).
- Add honey or maple syrup to taste.
- If using, sprinkle in the ground cardamom.
- Add the tablespoon of lemon juice.
- Blend on high speed until smooth and creamy, scraping down the sides as needed.
- For a chilled lassi, add ice cubes and blend again until crushed.
- Pour the blended lassi into a tall glass or mason jar.
- Garnish with mint leaves if desired.
