  • 1 ripe mango, peeled and diced
  • 1 cup plain yogurt (preferably Greek for creaminess)
  • 1 cup milk (almond or coconut milk for a dairy-free option)
  • 2 tablespoons honey or maple syrup (adjust based on sweetness preference)
  • 1 teaspoon ground cardamom (optional, for added flavor)
  • 1 tablespoon lemon juice (to balance the sweetness)
  • Ice cubes (optional, for a chilled lassi)
  • Mint leaves (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the bananas and slice them in half lengthwise.
  3. Line a baking sheet with parchment paper and place the banana halves cut side up.
  4. Drizzle a little honey or maple syrup over the bananas and sprinkle with cinnamon if desired.
  5. Roast the bananas for about 15-20 minutes, or until golden brown and caramelized.
  6. Remove from the oven and let cool for a few minutes.
  7. Slice the ripe mango in half, avoiding the pit.
  8. Score the flesh in a crosshatch pattern and scoop out the diced mango into a bowl.
  9. Optionally, add a squeeze of lemon juice to the mango.
  10. In a blender, add the roasted bananas first.
  11. Add the diced mango to the blender.
  12. Pour in the cup of plain yogurt.
  13. Add the cup of milk (adjust for thickness).
  14. Add honey or maple syrup to taste.
  15. If using, sprinkle in the ground cardamom.
  16. Add the tablespoon of lemon juice.
  17. Blend on high speed until smooth and creamy, scraping down the sides as needed.
  18. For a chilled lassi, add ice cubes and blend again until crushed.
  19. Pour the blended lassi into a tall glass or mason jar.
  20. Garnish with mint leaves if desired.
