Ingredients

  • 2 cups fresh mandarin juice (about 1012 mandarins)
  • 1 cup plain yogurt (Greek or regular)
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Wash the mandarins thoroughly under running water.
  2. Cut each mandarin in half and juice them using a citrus juicer.
  3. Strain the juice through a fine mesh sieve into a bowl to remove seeds and pulp. Set aside.
  4. In a large mixing bowl, combine the mandarin juice, yogurt, sugar, lemon juice, vanilla extract, and salt.
  5. Whisk until the sugar is fully dissolved and the mixture is smooth. Adjust sweetness if needed.
  6. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour.
  7. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (about 20-25 minutes).
  8. If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze. Every 30 minutes, scrape with a fork for 3-4 hours until fluffy.
  9. Transfer the sorbet to an airtight container, smooth the top, and freeze for at least 4 hours until firm.
  10. Let the sorbet sit at room temperature for 5-10 minutes before scooping. Serve in bowls or dessert glasses, garnished with mandarin slices, mint leaves, or honey if desired.
  11. Store any leftovers in an airtight container in the freezer. Consume within a week for best texture.
