Enjoy a light and zesty Mandarin Yogurt Sorbet made with fresh mandarin juice and creamy yogurt. This refreshing dessert is perfect for warm days or as a delightful finish to any meal.

- 2 cups fresh mandarin juice (about 10–12 mandarins)
- 1 cup plain yogurt (Greek or regular)
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice (freshly squeezed)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Wash the mandarins thoroughly under running water.
- Cut each mandarin in half and juice them using a citrus juicer.
- Strain the juice through a fine mesh sieve into a bowl to remove seeds and pulp. Set aside.
- In a large mixing bowl, combine the mandarin juice, yogurt, sugar, lemon juice, vanilla extract, and salt.
- Whisk until the sugar is fully dissolved and the mixture is smooth. Adjust sweetness if needed.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturers instructions (about 20-25 minutes).
- If you dont have an ice cream maker, pour the mixture into a shallow dish and freeze. Every 30 minutes, scrape with a fork for 3-4 hours until fluffy.
- Transfer the sorbet to an airtight container, smooth the top, and freeze for at least 4 hours until firm.
- Let the sorbet sit at room temperature for 5-10 minutes before scooping. Serve in bowls or dessert glasses, garnished with mandarin slices, mint leaves, or honey if desired.
- Store any leftovers in an airtight container in the freezer. Consume within a week for best texture.
