- 4 cloves garlic, minced
- 1 large lemon (zested and juiced)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme

- Fresh parsley, chopped (for garnish)
Instructions
- In a medium-sized bowl, combine the minced garlic, lemon zest, and lemon juice.
- Add the olive oil to the bowl and mix well.
- Sprinkle in the dried oregano and thyme, then season with salt and pepper to taste.
- Whisk everything together until well combined.
- Place the chicken thighs in a large resealable plastic bag or a shallow dish.
- Pour the marinade over the chicken thighs, ensuring they are well coated.
- Seal the bag tightly or turn the chicken in the dish to coat. Refrigerate for at least 30 minutes, preferably 2 to 4 hours.
- Preheat your oven to 400°F (200°C).
- Remove the chicken from the marinade and let any excess drip off. Discard the leftover marinade.
- Place the chicken thighs skin-side up on a baking sheet lined with parchment paper or in a cast-iron skillet.
- Season the chicken thighs with a little more salt and pepper on top.
- Bake for 35 to 40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown and crispy.
- For extra crispy skin, broil for an additional 2 to 3 minutes, watching closely to prevent burning.
- Let the chicken rest for about 5 minutes after removing it from the oven.
- Chop fresh parsley for garnish.
- Serve the chicken thighs on a platter, garnished with parsley and a drizzle of extra lemon juice if desired.
- Pair with your favorite sides like roasted vegetables, salad, or mashed potatoes.
