  • Author: Dottie
  • Total Time: 45-50 minutes
  • Yield: 4 servings 1x

Description

Juicy Lemon Garlic Chicken Thighs marinated in a zesty blend of lemon, garlic, and herbs, then baked for crispy skin. Perfect for weeknight dinners or special occasions!

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 large lemon (zested and juiced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a medium-sized bowl, combine the minced garlic, lemon zest, and lemon juice.
  2. Add the olive oil to the bowl and mix well.
  3. Sprinkle in the dried oregano and thyme, then season with salt and pepper to taste.
  4. Whisk everything together until well combined.
  5. Place the chicken thighs in a large resealable plastic bag or a shallow dish.
  6. Pour the marinade over the chicken thighs, ensuring they are well coated.
  7. Seal the bag tightly or turn the chicken in the dish to coat. Refrigerate for at least 30 minutes, preferably 2 to 4 hours.
  8. Preheat your oven to 400°F (200°C).
  9. Remove the chicken from the marinade and let any excess drip off. Discard the leftover marinade.
  10. Place the chicken thighs skin-side up on a baking sheet lined with parchment paper or in a cast-iron skillet.
  11. Season the chicken thighs with a little more salt and pepper on top.
  12. Bake for 35 to 40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown and crispy.
  13. For extra crispy skin, broil for an additional 2 to 3 minutes, watching closely to prevent burning.
  14. Let the chicken rest for about 5 minutes after removing it from the oven.
  15. Chop fresh parsley for garnish.
  16. Serve the chicken thighs on a platter, garnished with parsley and a drizzle of extra lemon juice if desired.
  17. Pair with your favorite sides like roasted vegetables, salad, or mashed potatoes.

Notes

  • For added flavor, consider adding sliced onions or bell peppers to the baking sheet before roasting.
  • Boneless, skinless chicken thighs can be used; just reduce the cooking time to about 25-30 minutes.
