  • 1 cup fresh blueberries (or frozen, if fresh is unavailable)
  • ½ cup powdered sugar (for glaze, optional)
  • 1 tablespoon lemon juice (for glaze, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, and set it aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and lemon juice until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. A few lumps are fine!
  6. Gently fold in the blueberries using a spatula.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Tent with aluminum foil if the top browns too quickly.
  9. Once baked, let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
