Ingredients
Scale
- 2 salmon fillets (about 6 oz each)
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 ripe avocado
- 1 tablespoon lime juice
- Salt and pepper to taste
- 4 slices of whole-grain bread
- 1 small red onion, thinly sliced
- 1 small tomato, diced
- Fresh cilantro, for garnish
- Optional: red pepper flakes for extra heat
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the salmon fillets dry with a paper towel.
- Rub the jerk seasoning evenly over the salmon fillets.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the salmon fillets skin-side down for 3-4 minutes until crispy.
- Transfer the skillet to the oven and bake for 8-10 minutes, or until the salmon flakes easily with a fork (internal temperature should reach 145°F/63°C).
- Remove from the oven and let the salmon rest for a few minutes.
- Cut the avocado in half, remove the pit, and scoop the flesh into a mixing bowl.
- Add lime juice to the avocado.
- Mash the avocado with a fork to your desired creaminess.
- Season with salt and pepper to taste, and add red pepper flakes if desired.
- Toast the whole-grain bread slices until golden brown and crispy.
- Spread a generous layer of the avocado mixture on each slice of toasted bread.
- Flake the salmon into large pieces and place it on top of the avocado spread.
- Add thinly sliced red onion and diced tomato on top of the salmon.
- Garnish with fresh cilantro and optional red pepper flakes.
- Serve immediately while the bread is warm and crispy.
- Pair with a refreshing drink like lime-infused sparkling water or a tropical smoothie.
- Store leftovers separately in airtight containers; the avocado spread is best enjoyed fresh.
- Enjoy with friends or family and share the recipe!
