  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 bell pepper (red or green), sliced
  • 100g button mushrooms, sliced
  • 2 cloves garlic, minced
  • 200g canned diced tomatoes
  • 2 tablespoons tomato ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese (optional)

Instructions

  1. Fill a large pot with water and bring it to a rolling boil. Add a generous pinch of salt.
  2. Add the spaghetti to the boiling water and cook according to package instructions (8-10 minutes) until al dente. Stir occasionally.
  3. Drain the spaghetti in a colander and toss with a little olive oil to prevent sticking.
  4. In a large skillet, heat the olive oil over medium heat.
  5. Add the chopped onion and sauté for 3-4 minutes until translucent.
  6. Add the sliced bell pepper and mushrooms, cooking for another 5-7 minutes until tender.
  7. Add the minced garlic and sauté for 1-2 minutes, being careful not to burn it.
  8. Pour in the canned diced tomatoes and stir. Let simmer for about 5 minutes.
  9. Add tomato ketchup, Worcestershire sauce, and soy sauce. Stir and let simmer for another 5-10 minutes, adding water if needed.
  10. Taste and season with salt and pepper as needed.
  11. Add the drained spaghetti to the skillet and toss to coat.
  12. Cook together for another 2-3 minutes over low heat.
  13. Twirl the spaghetti onto plates or into bowls.
  14. Top with fresh basil leaves and grated Parmesan cheese if desired.
  15. Serve immediately while hot.
