Ingredients
Scale
- 1 pound ground beef (preferably 80/20 for flavor)
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 2 tablespoons hot honey (adjust to taste)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon ground ginger
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 cups cooked rice (white or brown, your choice)
- 1 cup broccoli florets (steamed or sautéed)
- 1 cup bell peppers, sliced (any color you prefer)
- 1 avocado, sliced
- 2 green onions, chopped (for garnish)
- Sesame seeds (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the chopped onion. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes, stirring frequently to prevent burning.
- Increase the heat to medium-high and add the ground beef to the skillet. Use a wooden spoon to break it apart as it cooks. Stir occasionally until the beef is browned and cooked through, about 5-7 minutes.
- Drain any excess fat from the skillet if necessary, leaving a little for flavor.
- Pour in the soy sauce, hot honey, rice vinegar, sesame oil, ground ginger, black pepper, and salt. Stir until the beef is well coated in the sauce. Let it simmer for about 2-3 minutes to allow the flavors to meld.
- Cook your rice according to package instructions. (You can make a big batch ahead of time and store it in the fridge for quick meals.)
- While the rice is cooking, prepare your vegetables. Steam the broccoli until tender but still bright green, about 4-5 minutes, or sauté it in a pan with a little olive oil.
- Slice the bell peppers into thin strips. You can serve them raw for a crunchy texture or sauté them for a softer bite.
- Start by placing a generous scoop of cooked rice at the bottom of each bowl.
- Add a hearty portion of the hot honey ground beef mixture on top of the rice, ensuring to include some sauce.
- Layer on the steamed broccoli and sliced bell peppers, arranging them for a colorful presentation.
- Add a few slices of avocado on top for creaminess and texture contrast.
- Sprinkle chopped green onions and sesame seeds over the top for freshness and crunch.
Notes
- These bowls are great for meal prep; store the beef mixture and rice separately in airtight containers in the fridge for up to 4 days.
- For extra heat, drizzle more hot honey on top before serving or serve with lime wedges for a zesty kick.
- For a vegetarian version, substitute ground beef with crumbled tofu or tempeh and adjust seasonings accordingly.
