Description
Fresh corn on the cob with flavorful herb butter made with parsley, chives, thyme, garlic, and lemon zest. Choose to boil, grill, or roast!

- 6 ears of fresh corn, husks and silk removed
- 1 cup (2 sticks) unsalted butter, softened
- 1/4 cup fresh parsley, finely chopped
- 2 tablespoons fresh chives, finely chopped
- 1 tablespoon fresh thyme leaves
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Optional: Pinch of red pepper flakes for a little heat
Instructions
- Ensure butter is softened but not melted. Leave at room temperature for about an hour or microwave in short bursts (5-10 seconds).
- In a medium bowl, combine softened butter, parsley, chives, thyme, garlic, and lemon zest.
- Add salt, pepper, and red pepper flakes (if using). Mix thoroughly with a fork or spatula until well combined.
- Taste and adjust seasoning as needed.
- Chill for 30 minutes to allow flavors to meld.
- Remove husks and silk from each ear.
- Rinse under cold water to remove any remaining silk or debris.
- Trim ragged ends with a sharp knife.
- Bring a large pot of water to a rolling boil.
- Add the shucked and cleaned corn.
- Cook for 5-7 minutes, until kernels are tender and bright yellow.
- Remove and drain.
- Preheat grill to medium-high heat. Clean and lightly oil the grates.
- Place the shucked and cleaned corn directly on the grill grates.
- Grill for 10-15 minutes, turning every few minutes, until kernels are slightly charred and tender.
- Remove from grill.
- Preheat oven to 400°F (200°C).
- Wrap the corn in aluminum foil (optional).
- Place the corn on a baking sheet and roast for 20-25 minutes, until kernels are tender and slightly browned.
- Remove from oven.
- While the corn is still hot, generously spread the herb butter all over each ear.
- Serve immediately.
