  • 6 ears of fresh corn, husks and silk removed
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Optional: Pinch of red pepper flakes for a little heat

Instructions

  1. Ensure butter is softened but not melted. Leave at room temperature for about an hour or microwave in short bursts (5-10 seconds).
  2. In a medium bowl, combine softened butter, parsley, chives, thyme, garlic, and lemon zest.
  3. Add salt, pepper, and red pepper flakes (if using). Mix thoroughly with a fork or spatula until well combined.
  4. Taste and adjust seasoning as needed.
  5. Chill for 30 minutes to allow flavors to meld.
  6. Remove husks and silk from each ear.
  7. Rinse under cold water to remove any remaining silk or debris.
  8. Trim ragged ends with a sharp knife.
  9. Bring a large pot of water to a rolling boil.
  10. Add the shucked and cleaned corn.
  11. Cook for 5-7 minutes, until kernels are tender and bright yellow.
  12. Remove and drain.
  13. Preheat grill to medium-high heat. Clean and lightly oil the grates.
  14. Place the shucked and cleaned corn directly on the grill grates.
  15. Grill for 10-15 minutes, turning every few minutes, until kernels are slightly charred and tender.
  16. Remove from grill.
  17. Preheat oven to 400°F (200°C).
  18. Wrap the corn in aluminum foil (optional).
  19. Place the corn on a baking sheet and roast for 20-25 minutes, until kernels are tender and slightly browned.
  20. Remove from oven.
  21. While the corn is still hot, generously spread the herb butter all over each ear.
  22. Serve immediately.
