  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 lime, juiced
  • 1 ripe avocado, diced
  • 1 medium tomato, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional for heat)

Instructions

  1. In a small bowl, combine the olive oil, garlic powder, smoked paprika, salt, and pepper. Whisk until well blended.
  2. Place the salmon fillets in a shallow dish or resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is well coated.
  3. Cover the dish or seal the bag and refrigerate for at least 30 minutes.
  4. In a medium bowl, combine the diced avocado, diced tomato, chopped red onion, cilantro, and minced jalapeño (if using).
  5. Squeeze the lime juice over the mixture and gently toss with a fork or spoon. Season with salt and pepper to taste. Set aside.
  6. Preheat your grill to medium-high heat.
  7. Remove the salmon from the marinade, allowing excess to drip off. Discard the leftover marinade.
  8. Place the salmon fillets skin-side down on the grill. Grill for about 4-5 minutes until it easily releases from the grill.
  9. Carefully flip the salmon and grill for an additional 3-4 minutes, or until cooked through (internal temperature should reach 145°F/63°C).
  10. Remove the salmon from the grill and let it rest for a couple of minutes.
  11. Place a grilled salmon fillet on each plate and generously spoon the avocado salsa over the top.
  12. Garnish with additional cilantro or lime wedges if desired. Serve immediately.
