  • 1 pound of sirloin steak, cut into 1-inch cubes
  • 4 medium-sized potatoes, diced into 1-inch pieces
  • 1 cup of green beans, trimmed
  • 4 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 teaspoon of dried rosemary
  • 1 teaspoon of dried thyme
  • Salt and pepper, to taste
  • Aluminum foil (enough for 4 packs)

Instructions

  1. In a large mixing bowl, combine the olive oil, minced garlic, dried rosemary, dried thyme, salt, and pepper. Add the cubed sirloin steak and toss to coat. Let it marinate for 15-20 minutes.
  2. Wash and dice the potatoes into 1-inch pieces. Trim the ends of the green beans and set aside.
  3. Preheat your grill to medium-high heat (about 400°F) or your oven to 400°F. Tear off four large pieces of aluminum foil, about 12 inches long. Place an equal amount of diced potatoes in the center of each piece of foil, followed by a portion of the marinated steak, and then a handful of green beans.
  4. Drizzle a little extra olive oil over the top of the ingredients in each pack. Season with additional salt, pepper, and a sprinkle of rosemary and thyme. Fold the sides of the aluminum foil over the ingredients to create a sealed packet.
  5. Place the foil packs on the grill grates or on a baking sheet if using the oven. Cook for about 20-25 minutes, flipping the packs halfway through. Check for doneness by carefully opening one pack to ensure the potatoes are tender and the steak is cooked to your liking.
  6. Remove the foil packs from the grill or oven and let them sit for a few minutes. Carefully unwrap the packs, being cautious of the steam. Serve directly in the foil or transfer to a plate, garnished with fresh herbs if desired.
