Ingredients
Scale
- 1 pound boneless, skinless chicken breasts
- 4 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional, for heat)
- Wooden or metal skewers
Instructions
- Cut the chicken breasts into bite-sized pieces, aiming for 1 to 1.5-inch cubes for even cooking.
- In a large mixing bowl, combine minced garlic, grated Parmesan cheese, olive oil, chopped parsley, lemon juice, salt, black pepper, and red pepper flakes (if using) to create the marinade.
- Add the chicken pieces to the marinade and toss well to coat thoroughly. Using your hands can help ensure even mixing.
- Cover the bowl with plastic wrap or a lid and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 4 hours or overnight for enhanced flavor.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Metal skewers can be used directly after cleaning.
- Preheat your grill to medium-high heat or heat a grill pan on the stove over medium-high heat.
- Assemble the skewers by threading the marinated chicken pieces onto them, placing about 4-5 pieces per skewer with space in between for even cooking.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F (75°C) and is golden-brown.
- If using a grill pan, the cooking time will be similar; monitor and turn frequently.
- Once cooked, remove the skewers from the grill and let them rest for a few minutes to allow juices to redistribute.
- Prepare any desired sides, such as a fresh salad or grilled vegetables, to serve alongside the skewers.
- Serve the skewers on a large platter, optionally sprinkling with extra Parmesan cheese and chopped parsley for presentation.
- For added flavor, serve with lemon wedges for squeezing over the skewers before eating.
Notes
- For variety, try different herbs and spices in the marinade, such as Italian seasoning or smoked paprika.
- You can add vegetables like bell peppers, zucchini, or cherry tomatoes to the skewers, cutting them to similar sizes as the chicken.
- For a healthier option, bake the skewers in a preheated oven at 400°F (200°C) for 15-20 minutes, turning halfway through.
- Shrimp or tofu can be used instead of chicken; adjust marinating time accordingly.
