  • 4 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 tablespoon of fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon of fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 tablespoon of fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the baby potatoes under cold water to remove any dirt.
  3. Cut the potatoes in half or quarters for uniform cooking.
  4. Pat the potatoes dry with a clean kitchen towel.
  5. In a large mixing bowl, mix olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.
  6. Toss the dried potatoes in the herb mixture until well-coated.
  7. Allow the potatoes to marinate for 15-30 minutes if time permits.
  8. Line a baking sheet with parchment paper or grease it lightly with olive oil.
  9. Arrange the coated potatoes in a single layer on the baking sheet.
  10. Roast in the preheated oven for 25-30 minutes, tossing halfway through.
  11. Ensure the potatoes are golden brown and tender by piercing with a fork.
  12. Transfer to a serving bowl and sprinkle with chopped fresh parsley.
  13. Serve hot as a side dish.

  • Baby potatoes are ideal, but Yukon Gold or red potatoes can also be used.
