  • 2 cups fresh spinach, roughly chopped

Instructions

  1. Prepare Chicken: In a medium bowl, toss chicken with 1/2 teaspoon Italian seasoning, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
  2. Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook for 5-7 minutes, or until cooked through and lightly browned. Remove from skillet and set aside.
  3. Sauté Aromatics: Reduce heat to medium. Add chopped onion to the skillet and cook for 3-5 minutes, or until softened. Add minced garlic and cook for 1 minute, or until fragrant.
  4. Season Base: Stir in the remaining 1/2 teaspoon of Italian seasoning, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper.
  5. Cook Gnocchi: Add potato gnocchi to the skillet. Pour in chicken broth and bring to a simmer. Reduce heat to low, cover, and cook for 5-7 minutes, or until gnocchi is tender, stirring occasionally.
  6. Create Sauce: Remove lid. Stir in heavy cream and Parmesan cheese. Cook for 2-3 minutes, or until sauce thickens, stirring constantly.
  7. Combine: Add cooked chicken back to the skillet. Stir to combine and heat through.
