- 1 tablespoon olive oil

- 1 cup tomatillos, husked and rinsed
- 1 jalapeño pepper, stemmed and chopped
- 1/4 cup onion, chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Optional: Avocado slices for serving
- Optional: Crumbled queso fresco for garnish
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Place the tomatillos and jalapeño on the baking sheet. Roast them in the oven for about 15-20 minutes, or until the tomatillos are soft and slightly charred.
- Once roasted, remove them from the oven and let them cool for a few minutes.
- In a blender or food processor, combine the roasted tomatillos, jalapeño, chopped onion, cilantro, lime juice, garlic powder, and cumin. Blend until smooth. For a chunkier salsa, pulse a few times instead of blending completely.
- Taste the salsa and season with salt and pepper as needed. Set aside.
- In a non-stick skillet, heat the olive oil over medium heat.
- Crack the eggs gently into the skillet, being careful not to break the yolks.
- Cook the eggs for about 2-3 minutes, or until the whites are set but the yolks are still runny. Cover with a lid for firmer yolks if desired.
- Sprinkle a pinch of salt and pepper over the eggs while cooking.
- Once cooked to your liking, carefully slide a spatula under each egg and transfer them to a plate.
- Place the fried eggs on a serving plate.
- Generously spoon the green salsa over the fried eggs.
- Optionally, add avocado slices on the side for creaminess.
- Sprinkle crumbled queso fresco on top of the salsa for added flavor.
- Serve immediately while warm and enjoy!
