Description

These French Toast Muffins are a delicious and convenient twist on traditional French toast, made with day-old bread soaked in a rich egg mixture and baked to golden perfection. Perfect for breakfast or brunch, they can be customized with nuts, chocolate chips, or even berries for a fruity touch. Enjoy them warm, drizzled with maple syrup!

Ingredients

Scale
  • 6 slices of day-old bread (preferably brioche or challah)
  • 4 large eggs
  • 1 cup whole milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup maple syrup (for drizzling)
  • 1/2 cup chopped nuts (optional, such as pecans or walnuts)
  • 1/2 cup chocolate chips (optional)
  • Butter or cooking spray (for greasing the muffin tin)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard 12-cup muffin tin with butter or cooking spray.
  3. Cut the day-old bread into 1-inch cubes and place them in a large mixing bowl.
  4. In a separate bowl, whisk together the eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.
  5. Pour the egg mixture over the bread cubes and gently fold to coat. Let it sit for 10-15 minutes to absorb the liquid.
  6. Fold in the chopped nuts and/or chocolate chips if desired.
  7. Fill each muffin cup with the bread mixture, packing it down slightly but leaving some room at the top.
  8. Drizzle a small amount of maple syrup over the top of each muffin.
  9. Bake in the preheated oven for 20-25 minutes, or until golden brown and a toothpick comes out clean.
  10. Remove from the oven and let cool for about 5 minutes.
  11. Run a knife around the edges and gently lift the muffins out. Place them on a wire rack to cool slightly.
  12. Serve warm, optionally topped with whipped cream, powdered sugar, or additional maple syrup.
  13. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for 20-30 seconds before serving.

Notes

  • For a fruity twist, add 1 cup of fresh or frozen berries to the batter.
  • For a savory version, omit sugar and vanilla, and add cooked bacon or sausage with shredded cheese.
