  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (or 1 tablespoon dried parsley)
  • 2 large eggs
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon baking powder
  • Olive oil or vegetable oil for frying
  • Optional: sour cream or yogurt for serving

Instructions

  1. Wash the zucchinis thoroughly under cold water and scrub gently. Trim off the ends and grate using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth, gather the edges, and twist to squeeze out excess moisture.
  2. In a large mixing bowl, combine the grated zucchini with 1 teaspoon of salt and let it sit for about 10 minutes to draw out more moisture. Squeeze the zucchini again to remove any remaining liquid. Add flour, Parmesan cheese, parsley, eggs, black pepper, garlic powder, onion powder, and baking powder. Mix until well combined.
  3. Heat a large skillet over medium heat and add enough oil to coat the bottom. Once hot, scoop about 1/4 cup of the zucchini mixture into the skillet, flatten slightly with a spatula, and cook for 3-4 minutes until golden brown. Flip and cook for another 3-4 minutes until crispy. Transfer to a plate lined with paper towels to absorb excess oil.
  4. Repeat the cooking process with the remaining batter. Serve warm as a snack, appetizer, or side dish, optionally with sour cream or yogurt. For added flavor, sprinkle with extra parsley or a squeeze of lemon juice before serving.
