  • 1 tablespoon of sugar (optional)
  • 1 tablespoon of lemon juice
  • 1 bottle of Prosecco (750ml)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Wash the peaches thoroughly under running water to remove any dirt or pesticides.
  2. Cut the peaches in half and remove the pit. Peeling is optional; leaving the skin on adds texture and nutrients.
  3. Chop the peach halves into smaller pieces for easier blending.
  4. Place the chopped peaches in a blender or food processor. If using sugar, add it now.
  5. Add the tablespoon of lemon juice to enhance flavor and prevent browning.
  6. Blend until smooth and creamy. For a chunkier texture, blend for a shorter time.
  7. Taste the puree; add more sugar if needed and blend again.
  8. Transfer the peach puree to a bowl or measuring cup and set aside. Refrigerate for up to a day if preparing in advance.
  9. Take a champagne flute or cocktail glass of your choice.
  10. Pour about 2 tablespoons of peach puree into the bottom of the glass.
  11. Slowly pour Prosecco into the glass, tilting it slightly to avoid overflow.
  12. Watch the bubbles rise as the Prosecco mixes with the peach puree.
  13. Once you’ve added about 4-6 ounces of Prosecco, gently stir with a long spoon to combine.
  14. Garnish with a fresh mint leaf for added aroma and color.
