Description
This elegant Bellini cocktail features ripe peaches blended into a smooth puree, combined with bubbly Prosecco for a refreshing drink. Perfect for brunch or summer gatherings, it offers a delightful balance of sweetness and effervescence, garnished with fresh mint for an aromatic touch.
Ingredients
Scale
- 2 ripe peaches (or 1 cup of peach puree)
- 1 tablespoon of sugar (optional)
- 1 tablespoon of lemon juice
- 1 bottle of Prosecco (750ml)
- Fresh mint leaves for garnish (optional)
Instructions
- Wash the peaches thoroughly under running water to remove any dirt or pesticides.
- Cut the peaches in half and remove the pit. Peeling is optional; leaving the skin on adds texture and nutrients.
- Chop the peach halves into smaller pieces for easier blending.
- Place the chopped peaches in a blender or food processor. If using sugar, add it now.
- Add the tablespoon of lemon juice to enhance flavor and prevent browning.
- Blend until smooth and creamy. For a chunkier texture, blend for a shorter time.
- Taste the puree; add more sugar if needed and blend again.
- Transfer the peach puree to a bowl or measuring cup and set aside. Refrigerate for up to a day if preparing in advance.
- Take a champagne flute or cocktail glass of your choice.
- Pour about 2 tablespoons of peach puree into the bottom of the glass.
- Slowly pour Prosecco into the glass, tilting it slightly to avoid overflow.
- Watch the bubbles rise as the Prosecco mixes with the peach puree.
- Once youve added about 4-6 ounces of Prosecco, gently stir with a long spoon to combine.
- Garnish with a fresh mint leaf for added aroma and color.
Notes
- Serve immediately for the best flavor and bubbly texture.
- For a large gathering, prepare the peach puree ahead of time and mix individual servings as guests arrive.
- Pair with light appetizers like bruschetta or cheese platters for a delightful experience.
- Experiment with adding raspberry or strawberry puree for a mixed fruit Bellini.
