- 4 boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 packet (1 oz) ranch dressing mix
- 1 cup chicken broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse the chicken breasts under cold water and pat them dry with paper towels. Season both sides with salt and pepper.
- (Optional) Sear the chicken in a skillet over medium-high heat for 3-4 minutes on each side until golden brown.
- In a medium bowl, combine the cream of chicken soup, cream of mushroom soup, and ranch dressing mix. Stir until well blended.
- Gradually add the chicken broth to the soup mixture, stirring continuously to avoid lumps.
- Add the chopped onion and minced garlic to the sauce mixture.
- Place the seasoned chicken breasts in the bottom of your crock pot. If seared, lay them with the browned side facing up.
- Pour the prepared sauce mixture over the chicken breasts, ensuring they are well coated.
- Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top of the chicken and cover to let it melt.
- Once cooking time is up, carefully remove the chicken from the crock pot using tongs.
- (Optional) To thicken the sauce, transfer it to a saucepan and simmer or mix a tablespoon of cornstarch with water and stir into the sauce.
- Serve the smothered chicken over rice, mashed potatoes, or pasta, garnished with freshly chopped parsley.
