Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs (preferably Italian seasoned)
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup marinara sauce (store-bought or homemade)
- Fresh basil leaves for garnish (optional)
- Olive oil for frying
Instructions
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound to an even thickness of about 1/2 inch.
- Season both sides of the chicken breasts with salt, pepper, garlic powder, onion powder, dried oregano, and dried basil.
- In a medium bowl, combine the shredded mozzarella cheese and half of the grated Parmesan cheese.
- Place a generous amount of the cheese mixture in the center of each chicken breast, being careful not to overfill.
- Roll the chicken breast tightly around the cheese filling, tucking in the sides as you go. Secure each roll with toothpicks or kitchen twine.
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with the remaining Parmesan cheese.
- Coat each chicken roll in flour, dip in the beaten eggs, and then roll in the breadcrumb mixture, pressing gently to adhere.
- Heat about 1/4 inch of olive oil in a large skillet over medium heat.
- Once hot, place the chicken rolls seam side down in the skillet and cook for about 4-5 minutes on each side until golden brown and crispy.
- Transfer the browned chicken rolls to a baking dish and sprinkle any leftover cheese filling on top.
- Pour marinara sauce over the chicken rolls, ensuring they are well covered.
- Sprinkle remaining mozzarella cheese on top of the marinara sauce.
- Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the cheese is bubbly and golden.
- Let the chicken rolls rest for about 5 minutes before removing toothpicks or twine.
- Serve hot, garnished with fresh basil leaves if desired, alongside a side salad, pasta, or garlic bread.
Notes
- Ensure the chicken is pounded evenly for consistent cooking.
- Feel free to customize the filling with additional ingredients like spinach or sun-dried tomatoes.
- Leftover chicken rolls can be stored in the refrigerator for up to 3 days.
