  • 1 cup breadcrumbs (preferably Italian seasoned)
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup marinara sauce (store-bought or homemade)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound to an even thickness of about 1/2 inch.
  3. Season both sides of the chicken breasts with salt, pepper, garlic powder, onion powder, dried oregano, and dried basil.
  4. In a medium bowl, combine the shredded mozzarella cheese and half of the grated Parmesan cheese.
  5. Place a generous amount of the cheese mixture in the center of each chicken breast, being careful not to overfill.
  6. Roll the chicken breast tightly around the cheese filling, tucking in the sides as you go. Secure each roll with toothpicks or kitchen twine.
  7. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with the remaining Parmesan cheese.
  8. Coat each chicken roll in flour, dip in the beaten eggs, and then roll in the breadcrumb mixture, pressing gently to adhere.
  9. Heat about 1/4 inch of olive oil in a large skillet over medium heat.
  10. Once hot, place the chicken rolls seam side down in the skillet and cook for about 4-5 minutes on each side until golden brown and crispy.
  11. Transfer the browned chicken rolls to a baking dish and sprinkle any leftover cheese filling on top.
  12. Pour marinara sauce over the chicken rolls, ensuring they are well covered.
  13. Sprinkle remaining mozzarella cheese on top of the marinara sauce.
  14. Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the cheese is bubbly and golden.
  15. Let the chicken rolls rest for about 5 minutes before removing toothpicks or twine.
