  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Mix until the crumbs are evenly coated.
  3. Press the mixture firmly into the bottom of a 9×9-inch baking dish.
  4. Bake for about 10 minutes, or until lightly golden. Let it cool.
  5. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy (2-3 minutes).
  6. Gradually add powdered sugar, mixing until fully incorporated.
  7. Pour in heavy cream, vanilla extract, and lemon juice. Beat on medium speed until thickened and soft peaks form (3-5 minutes).
  8. Gently fold in the sliced strawberries.
  9. Pour the strawberry filling over the cooled crust and spread evenly.
  10. Cover with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or overnight.
  11. In a small bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss to coat.
  12. Let sit for 15-20 minutes to create a syrup.
